Info: Alain Parodi is one the few best chefs around. A seductive environment for his two dining rooms (one upstairs), stone walls, ceiling beams, and a fireplace. His cuisine has become even more likable, with a particular keenness in the style and a careful choice of local products and origins. Sea urchins with cébettes; saffron jelly and creamed eggs and lemon; spiced octopus and chorizo; roast veal and rice with pistachio; braised fennel with anis; or, an up-to-date classic, stuffed Sea Bass with spicy octopus, green anis and cumin shoots in salad. The desserts are just as outstanding, a very "Ducassian" hazelnut-chocolate soft-crusty finger; mango and praline ice cream; rum baba and whipped cream. Striking, delicate, and contemporary. The wine cellar is elaborate in grand crus and Grand South, with some foreign labels. Intimate ambiance and service. Parodi's excellence remains.
