This Dijon institution facing the ducal palace has been serving classic Burgundian cuisine for over 150 years, including Bresse chicken with morel mushroom sauce and eggs ‘en meurette’ – poached in Pinot Noir. Father and son chefs Jean-Pierre and Alexis Billoux add inventive touches.
